Instructions

  1. In a small bowl, mix together the shrimp, mayonnaise, tomato paste, salt, pepper, and red onion until well combined.
  2. For serving, top each avocado boat (2 per serving) with equal amounts of shrimp filling. Sprinkle with cayenne pepper if you like some heat and chives for a splash of color.

Tip

Make a slice in the bottom of the base of each avocado half to make it more stable on your plate.

The filling stays fresh in the refrigerator in an air-tight container for at least four days. Avocado halves may brown slightly around the edges.

Instead of shrimp, you can also use chopped cooked chicken, ham, or salmon.

Why you'll love these shrimp avocado boats

Shrimp avocado boats are proof that a delicious, satisfying meal doesn't have to be complicated. With creamy avocado, tender shrimp, and a simple mayo dressing, this recipe comes together in just five minutes, making it perfect for busy weekdays, quick lunches, or a light dinner.

Avocados provide healthy fats and a rich, buttery texture that pairs beautifully with sweet, juicy shrimp. A touch of tomato paste, onion, and seasoning adds just enough flavor to let the fresh ingredients shine. The result is a naturally low-carb meal that's filling, refreshing, and packed with protein.

This recipe is also incredibly versatile. Swap the shrimp for cooked chicken, salmon, tuna, or crab, or add chopped celery, cucumber, fresh herbs, or a squeeze of lemon for even more flavor and crunch. You can prepare the shrimp filling ahead of time and simply spoon it into freshly cut avocados whenever you're ready to eat.
