Ingredients

  • 3½ oz. 100 g fresh strawberries or frozen strawberries
  • ¼ cup (1¼ oz.) 60 ml (32 g) powdered erythritol (optional)
  • 1 tsp 1 tsp lemon juice (optional)
  • 7½ oz. (1 cup) 210 g (240 ml) cottage cheese
  • 2 oz. (4 tbsp) 55 g (55 ml) cream cheese
  • 1 tsp 1 tsp vanilla extract
  • ½ tsp ½ tsp lemon zest (optional)
  • 4 fl. oz. 120 ml heavy whipping cream

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Add strawberries, erythritol, and lemon juice to a small saucepan.
  2. Cook over medium-high heat until the strawberries are soft and the sauce has slightly thickened. Set aside to cool.
  3. Blend the cottage cheese, cream cheese, lemon zest, and vanilla extract in a blender or food processor until smooth.
  4. Add the cooled strawberries and blend again until smooth and creamy.
  5. Whip the heavy cream to soft peaks. Gently fold the whipped cream into the strawberry mixture.
  6. Divide between serving glasses and refrigerate until set.

Recipe notes

Cook the strawberries, whether fresh or frozen, for this dessert. Cooking intensifies their flavor and helps create a richer strawberry mousse.

If you add fresh strawberries directly to the blender or food processor instead, keep in mind that they may add extra liquid and make the mousse thinner.

Whip the cream just until soft peaks form. Whipping it to stiff peaks can make the mousse more difficult to combine smoothly.

For the smoothest cottage cheese mousse, let the cottage cheese and cream cheese come to room temperature before blending.
